Faith Necklace

Look I did something crafty!  I made a custom "faith" necklace. It was a fun little project. 
 

Ice Cream Recipe

 
Our ice cream experiments were interesting. The main lesson that we learned is that if you want a nice texture your ice cream needs fat or some other hard to freeze ingredient (so the version we made with just soy milk turned into a giant hunk of soy ice instead of ice cream).

Our soy ice cream success had:
1 block of silken tofu
1 cup to 1 and 1/4 cups of soy milk
3/4 of a cup of Splenda
Hershey syrup / chocolate powder (if we made this again I would substitute cocoa powder)
We put in hunks of cookie dough for fun

We blended all the ingredients except the cookie dough in a blender and poured it into an ice cream maker. We added the cookie dough hunks at the very end. I thought the final product was slightly tofu tasting but it got better when frozen for awhile (I think dark cocoa powder or fruit flavoring would hide the tofu flavor better). I pondered decreasing the amount of tofu but I think the texture would suffer. More recipes to come as we improve.

We also made coconut pineapple sorbet - the coconut milk I used smelled funny but the sorbet was delicious.

We used:
1 can of coconut milk
1 and 1/4 cups of water
1 cup of sugar
1/4 cup of sweetened coconut (shredded)
Fresh pineapple

I simmered the coconut milk, water and sugar on medium heat for about 5 minutes then I chilled the mixture over night. I added a few tablespoons of pineapple juice and the shredded coconut right before pouring into the ice cream maker. The pineapple juice may have been a mistake because it made the pineapple flavor very strong. When the ice cream was almost done I added fresh shredded pineapple.

We also made some full fat normal ice cream with Oreos in it and some with cherries and chocolate chips. They were amazing too.

I highly recommend getting an ice cream maker. Tons of fun!

30 Day Challenge

 
I am taking One Twenty Five up on her 30 day challenge. I am going to run my first 5K race on July 4th (registered already and everything).

Today one of my friends finished a 25K and one of my coworkers did a Tri so my 5K doesn't seem all that impressive but everyone's got to start somewhere right? I've managed to get G, B, and one other friend in on it as well!


 

Homemade Ice Cream

Last night I bought a Cuisinart ice-cream maker!!!  I got one for a coworker for a wedding gift and thought that it would be a fun summer treat for us too. I am going to make my first batches this weekend. We are going to experiment with soy cherry almond or vanilla ice cream and coconut pineapple sorbet. I hope they turn out well!

Lego Mania

 
We thought it would be fun to go to the grand opening of the Lone Tree Lego store (granted the store has technically been open for weeks). Little did we know that would mean standing in line for 30 minutes. Chases ended up buying some mini Lego figures. After all that waiting and not buying a Lego kit, later today when we were at Target Chase decided he wanted a kit afterall.

Boris loves Legos...although he is very strict about Lego building rules.


Chase loved the Lego guys and trapping the mermaids in nets but was more interested in cutting the wrapping up then building anything.


Pirates of the Carribean...very cool Lego set...

Happy anniversary to my amazing husband! I can't believe we have been married for seven years.

1) B believes that dishes need to be washed with soap before being loaded into the dishwasher

Look!  My first Craig's list purchase - a kiddo table and chairs for Chase's future room.  I am going to paint it white and cover the top with comic book pages and a nice glossy finish. I hope it turns out like I imagine it will!

More House Updates

 
So as you can imagine there may be many house updates on my little blog in the next few months...

Boris went by the house today and they are working on the exterior.



All the electrical is already in! (Except of course they are already missing the dual shower head and 8 of the canned lights that they were suppose to have put in)...good thing we brought it up before they started putting up the dry wall.



The big surprise this week is that I went to pick out cabinet hardware and I when I got there I found out that "SURPRISE!!!" they didn't order the cabinets that they told us they had ordered (those are apparently going in next door). They actually had ordered the ones we wanted with the flat doors like in the model!!! I felt very lucky!

I am already pondering paint colors. I am thinking the yellow green color in the study and the dark brown as an accent wall in the living room. The middle color is the house paint color.



Oh and I found a picture of the carpets online.



Things are coming along - I even ordered a bunch of old comic books today to use to decorate Chase's "Superhero" room.

Mommy and Me


My mom is the most wonderful mom in the world!

Her name is Kate

She's pretty as a ballet dancer

She is 6 years old

She has black eyes and brown hair

She weighs 70 pounds and is 70 feet tall

Her favorite food is bagel

I think my mom is funny when she goes ring around the rosie

But I know she's really angry when she bangs the wall

I wouldn't trade my mom for a dress

I love my mon because she gives hugs and kisses

Moms Rock

 
Happy mother's day to all you moms out there. I am one of those lucky people with an amazing mom - she is a very special person and I am lucky to have her in my life. Thanks for always being there mom!

Being a mom has been quite an adventure as well. It is one of the best decisions I ever made and I can't imagine my life without Chase. I am so proud of the little man he is turning out to be.

So far I've had a great mother's day. B let me sleep in and brought me bagels for breakfast.

Chase drew me this picture of a clown, a flower, and a potatoe falling out of the sky. Lol.


B got me this Lulu jacket (ah Lulu how I love you) and some flowers. What more could a mom want (oh yeah a new house - and we signed the paperwork yesterday!!!)
