House Hunters - Colorado

 


So we sold our house (well we accepted an offer - inspection is today and then we have appraisal to get through) - I know I should be thrilled but right now I only have two thoughts running through my head:
1) CRAP I can't move at the end of March - I have a daycare gap until June!!!
2) The house I really wanted sold, my second choice wouldn't come down in price enough for us to buy, so now I am in house hunting mode (and for how much people say there are tons of good houses on the market - not really so true - the good ones sell so only the over priced or bad ones are left sitting around)

Out for house hunting day 3 this weekend...

On a happier note - I wanted to give a shout out to Capricious - Good for you for taking life by the horns and doing exactly what you want to do!!!

Papaya Creme

 


One of the other things I loved at Fogo de Chao was their papaya creme dessert (I actually liked the strawberry one better but same concept). Light and delicious.

Look how easy it is to make! I am guessing it would be great with all sorts of fruit.

1 medium ripe papaya, cut up in chunks
2 -3 scoops of Hagen Daaz vanilla ice cream (tried other brands, Hagen Daaz is the best)
1 tablespoon creme de cassis (optional)

Put cut up papaya chunks and ice cream in blender and blend until smooth and creamy, serve in a dessert glass. Add Creme de Cassis if desired.

Fogo de Chao Cheese Bread

 


Last night we went to Fogo de Chao for Valentine's day and had a blast. I LOVE their plantains, cheese bread, and dessert (of course their salad bar and meats are good too).

Anyways, I asked if I could take a few of the cheese bread rolls to go and they said they don't let anything but desserts out the door but the waiter gave me a tip that the recipe is online.

Here are a few recipes I found (I will have to start experimenting) - interestingly enough since they use tapioca flour they are gluten free.

Recipe 1:
1 1/2 cups whole milk
1 1/2 cups sour tapioca flour (azedo)*
1 cup sweet tapioca flour (doce)
3/4 cup shredded parmesan cheese
3/4 cup corn oil
4 eggs
1 teaspoon salt

Mix ingredients and fill mini muffin pans 3/4 of the way fill and bake for 15 minutes at 425 degrees until golden brown.

Recipe 2:
1 1/2 cups whole milk
1 1/2 cups sour tapioca flour (azedo)*
1 cup sweet tapioca flour (doce)
3/4 cup shredded parmesan cheese
3/4 cup corn oil
4 eggs
1 teaspoon salt

Mix ingredients and fill lightly greased mini muffin pans 3/4 of the way fill and bake for 15 minutes at 425 degrees until golden brown.

Recipe 3:
1 egg*
1/3 cup olive oil
2/3 cup milk
Scant 1 1/2 cups (170 grams) tapioca flour
1/2 cup (packed, about 66 grams) grated cheese, your preference, though we got the best results from Mexican farmer's cheese - queso fresco
1 teaspoon of salt (or more to taste)

Mix ingredients in a blender until smooth and fill lightly greased mini muffin pans 3/4 of the way fill and bake for 15 - 20 minutes at 400 degrees until golden brown.

Tofu Pouches

 
My aunt introduced me to tofu pouches (stuffed with sushi rice and mushrooms) and they are the most delicious thing ever! They are pre-made little pouches that you tear open and stuff with goodness. They are perfect for taking to lunch on work days. Go out and try some!

The Hunger Games

 
For my birthday I got The Hunger Games series and I am in love. I read the first book in a day and the second one is calling to me. I highly recommend it, it is an easy read with a great story line and interesting characters. I am surprised it is classified as young adult because it is on the "dark" side...

Another Birthday Came and Went

 
I am officially in the last year of my 20s (30s here I come). This year my birthday was fairly bland although after all was said and done I did end up with a great girls night dinner, some special sparkly lip gloss, some great books, Beauty and the Beast, a fun crocheted scarf, really cool wishing paper (which I hope works soon so that we can move), a gift card to Lululemon (because can one ever have enough Lulu in their lives), an iTunes gift card, yummy smelling soaps, some moolah, some amazing asian food and delicious cake. So I guess for all my complaining it was a pretty good haul. Also B got me a new ring setting for Valentine's day / my birthday - it is being set now I can't wait to get it back!!!

Hopefully this year is just prep for my amazing 30s =)

PS: Due to life stress I have totally fallen off the blogging wagon (and a few other wagons like the weight loss one and the taking pictures one and the crafting one - you get the picture) but slowly but surely I hope to reclaim my hobbies!
