For some reason I have happy childhood associations with pineapple upside down cake. I don't remember a specific event or reason for it but I remember making it and loving it so while at the grocery store the other day I impulse bought a mix and Chase and I made it tonight. I love being able to share things I liked as a kid with Chase - it is one of my favorite parts of parenting.
In baby news I am 33 weeks pregnant now and my feet are swollen and I am hot and generally miserably uncomfortable. I hope the next few weeks go by quickly!!! Curse 90+ degree Denver summer days!!! On that note I am off to cheer myself up with yummy cake.
If you have never made cupcakes in cones I recommend you run out to the store and buy supplies now!
- cake cones
- boxed cake mix (and whatever ingredients you need to make the cake)
- frosting (and sprinkles or anything else you want to decorate with)
Mix the batter according to directions and fill a cake cone about 2/3s full (about to where to cone opens up). Microwave for about 40 seconds. Frost and enjoy. They are seriously moist and amazing!!
I LOVE fishing!!! I always have. We went out on a charter and B caught 2 fish (one of which was the biggest fish), Chase caught one all by himself (and reeled in all of mine), and I caught 4 (including a salmon)!
Capricious and I went out for afternoon tea today. If you have never been to English Tealeaves in Parker check it out. Really fun way to spend the afternoon with the gals. My favorite tea was an Almond Rose tea (we also had coconut chai and peach mojito).
I can't believe Chase is going to be a 1st grader in the fall. Time goes by so fast! They are doing a pizza party, movie watching, and Jammie day at school to celebrate - what a fun idea.
Chase has grown up so much this school year and is turning into quite the little man. His Para this year said he is one of her favorite kids ever because he is kind and smart and always asks amazing questions. It made me tear up with pride.
I am so excited to see what the future holds for this wonderful kiddo (only not too fast because I am not ready yet!)
PS: Getting a normal smile out of a 5 year old is impossible.
We finally got around to finishing our backyard! I am so happy to have an outdoor space now. Yay for summer, sleeping in the hammock, roasting marshmallows, drinking wine with friends and family, and enjoying the great outdoors!
PS Finishing a great outdoor space has made our motivation to work drop down to 0...we just want to play all summer.
